Symbols in Meta Keywords

Now, I know that headings and good content etc is the best bet for SEO. However, I still feel the need to define keywords outright in a <meta> tag.

I have two concerns - hopefully someone can help.

1. Contractions. My last name - O'Neill - is a contraction. Is that apostrophe going to mess things up?

2. One word? Two words? I've seen some sites do things like "web, design, web design, ..." and so on. Is that necessary? Or should you just use single words?

if you are concerned about it affecting your SERPS I wouldn't worry - nothing you put in there will make much difference, if at all.
