Currently bored to tears at my work I am going to do some work off my own back, whats a good print based thing to do..... Suggestions.

Try branding exercise - that way you get to work on logo, logotype, ads, letterhead, business card, website...

I think magazine Spreads are a good at making something that "pops". It's usually 3 pages and its really funn to work on them and make something original and different from a template like layout.
