i call it blue screen....
but it's nothing to do with Photoshop - unless needed for Aftereffects... but that I don't know much about...

they do call it green as well...
think they started using green instead of blue *lately*.... better masking i guess.........

Matting in photoshop is a way of defringing layers - so if you have some flattened text anti aliased against a black background you can use the matting option to alter the anti alias colour so it'll sit against a non black background without any odd fringing. You can do a similar thing from the layer styles palette.
