    My actual intake today is,

    Porridge, Protein shake + some ultra fine oats, 2 chicken breats, Egg sarnies, lots of water, just had a drink which contained Glutamine. Now eating some pasta I made last night.

    as I am not a fat bastard since xmas... and the running just hasn't started as it is too cold. I forced myself to tuck into a nice weightwatchers Glazed Chicken microwave meal. It wasn't actually that bad... bit pricey though...

    Had a mate over for tea so I did hot hummus and menemen with fresh bread. My mate brought a tub of home made cointreau and lime ice cream. Had a good moan at everything and finished off the Highland Park. Most civilised.

    I was just reading an article somewhere about glutamin. As a taste, it's related to the new-fangled umami which scientists have determined makes up the fifth basic taste we have receptors for on our tongues. The other tastes are sweet, bitter, salty and sour. There is probably a sixth too, piquancy or pepperiness. Umami is savouriness and glutamin is similar to it. Amongst other things the article mentioned was the trick of slinging a couple of anchovies into a meat stew or hot-pot to give a glutamin deliciousness to the dish. The anchovies melt and disappear during cooking but their taste goes on.

    Cue Celine Dion.

    But I don't think you're supposed to be mouthing great chunks of the stuff.

    Umami is supposed to relate particularly to Japanese cooking, wasabi and soy sauce, that kind of thing. I was listing to a thing on the radio about it on Monday, apparently Italian 'gastronomy' programmes use pure MSG to teach about umami.

    Well, umami is a Japanese word but it's the taste which is strongest in Marmite and in meat. (It means yumminess!) So we've had it around in our food for a long time. I don't think wasabi has it because that's the green peppery paste which tastes a lot like horseradish. But soy definitely gives a bland bowl of rice some yumminess!

    What's MSG? I don't know what the initials stand for.

    I think it is particularly the mix of soy sauce and wasabi that there is in sushi, or in certain coatings on Japanese snacks. MSG = Monosodium glutamate. Its a common food additive (or used to be) but its common ingredient in far-eastern cooking.
