I'm in the process of converting the rest of my CD collection to MP3 (in addition to music acquired through...other means), but when it takes 15-20 minutes per CD...I prefer not to sit all night watching CDs rip.
If anyone's interested in ripping some super-high quality MP3s, I've found this guide very helpful. All free software, too.
