I'm on the fence on this one.

Do what you want I say. It's your own site, so it should reflect your commercial personality to some degree. But don't make it too complicated.

My flat mate got quite a few job offers because he made a really cool flash site, lots of bells and whistles. Really nice and nothing like I'd ever seen before, but looking at his work frustrated me, it all seemed too small.

But on the other hand, minimilistic sites can be really boring, especially when they look like every other one. I don't like the new Dstrukt site, for instance. I've noticed he's used a tool called INDXR to do it, and so have a load of other people, and all the sites have the same feel to them. Every INDXR site I looked at now makes me cringe. And they are slow as shit.

There are opposite ends of the spectrum, and neither is right or wrong.
Take a look at the contrast in these 2 for example:
