Any of the Linux distros you mentioned would be a perfectly capable choice. There's not actually a massive amount of difference between them if you're running them as LAMP boxes.
As for Windows vs. Linux there really isn't a choice to be made. If you were choosing desktop machines, there might be a debate. Since you're specifying a server, there simply isn't one. You can read all the resources you want. It won't change the fact that Linux is and always will be the better option. I'd question your sanity if you went for Windows (and I'm no Microsoft hater).
